The 2021 Chablis Les Preuses Grand Cru has a more backward bouquet than the Blanchot, again, very well-defined but with a slightly more stony, pressed flower bouquet. The palate is very well balanced with orange rind and tangerine, taut and linear but perhaps without the grace of the Blanchot. A bit terse at the moment; this will require time.

Billaud's 2021 Chablis Grand Cru Les Preuses derives from 60-year-old vines in the heart of the climat, and they have turned in a compelling performance this year, delivering a wine of lovely aromatic range that evokes sweet citrus oil, crisp stone fruit and white flowers. Medium to full-bodied, satiny and incisive, it's fine-boned, bright and mineral, concluding with a saline finish.
Fermented in 456-litre barrels, one 2 years old and one 5 years old. Then six months in tank. Tank sample. Essence of Chablis. Purity of fruit, dryness of crushed stones, complexity of oak and tension of the final stage in tank. Outstanding intensity and length. Endless finish. Wow! (JH)
