Domaine Paul Pernot is synonymous with the appellation of Puligny-Montrachet. For the last 30 years the estate – alongside Domaine Leflaive and Domaine de Montille (previously Château de Puligny-Montrachet) – has been one of the largest shareholders in the appellation, playing a significant role in maintaining its reputation for complex, expansive, mineral-tinged Chardonnay.  Paul Pernot created his estate in the early 1950s, initially with 11 hectares, although at the time not all of it was planted to vines. It was only in the 1950s, with the invention of modern tractors, that the hard limestone rock could be penetrated for the first time, enabling more of the appellation to be planted with vines and Pernot’s acreage increased. By the early 1990s, the estate had increased its holdings to 20 hectares, including plots in the Grands Crus of Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet.  Puligny – with its 230 hectares of vineyards – is considerably smaller than its neighbouring appellations, Meursault and Chassagne-Montrachet, with notably fewer vignerons fortunate to own vines in this prestigious appellation. Domaine Paul Pernot, thanks to its relative size, is therefore in an enviable position, with its production in high demand from the main négociants of Burgundy and beyond.  The estate has historically sold significant volumes, most notably to Joseph Drouhin, while keeping the cream of their crop for themselves, typically just 40% of their production. It was this that prompted Alvina Pernot to establish her own label. “My husband Philippe and I have been wanting to make our own wine for several years. As the family estate sells part of the harvest to the negociants, it seemed logical for us to start recovering part of it.”  Alvina Pernot, (granddaughter of Paul Pernot), a young vigneron born and raised in Puligny Montrachet, grew up close to the family estate, as her father and uncle managed the domaine throughout her childhood. Despite branching out on her own, Alvina Pernot still works at the family estate, managing the commercial and administrative part of the business (allocations, customer tastings, logistics, management, etc). Until last year she was also involved in the winemaking, but this year she was not able to be there as much. “Now we have reached a point where my husband and I must be completely focused on our own wines at vinification.” The quick-ripening season of 2019 made that ever clearer, as there was a rush to get the grapes picked to retain the taut traits typical of her wines.  Growing up under the guidance of such a prestigious Puligny estate was no doubt insightful for Alvina. The most important thing she learned from her father and grandfather she explains “is that exemplary work in the vineyard allows for high quality raw material. From then on, we have all the cards in our hands to make the best wine possible.” Despite the similarities in their viticultural practices, there are notable differences in the winery. “When we started, we didn't want to make a copy and paste of the domaine, but rather try to produce a wine in our image: reflecting our own vision of wine. We love the domaine wines and share the same passion of the profession, but we also love the idea of creating something for ourselves and trying new things.”  “With the smaller production levels, an extra attention to detail becomes possible,” says Alvina. She opts to hand harvest in small crates as opposed to the traditional large containers, better protecting the grapes against oxidation. During the all-important pressing stage, Alvina opts for the more traditional vertical press, rather than the more widely used modern horizontal pneumatic presses. According to Alvina, the traditional vertical presses have a distinct qualitative advantage despite losing 15 - 20% more juice than modern presses. “It reduces oxidation, provides a greater purity of juice with naturally higher acidity and therefore freshness.”  The Alvina Pernot wines have longer ageing on the lees too, right up until bottling – 11 months. In the future Alvina hopes to extend her control of élevage further, with a soon-to-be-built new winery in Puligny, allowing her, when necessary, to age the wine on the lees even longer. She and Philippe hope to have the winery up and running by the 2021 harvest.  How each of these bespoke adjustments affect the final result in bottle is an interesting experiment to explore. No doubt the wines from Domaine Paul Pernot and Alvina Pernot are distinctly different. Paul Pernot grapes are typically picked a few days later than Alvina’s on the same site, with a style very much focused on concentration and richness. Alvina’s methodology is more focused on purity and tension. To taste the wines side by side is a fascinating contrast of Puligny’s potential. The estate is lucky enough to own vines in both the Grands Crus of Bienvenues-Bâtard Montrachet and Bâtard-Montrachet, yet it is the Premier Cru Les Folatières that Alvina believes shows the Paul Pernot domaine at its best, the most representative rendition of the Folatières terroirs. “We are the largest owner of this appellation (three hectares) and the positioning of our plots (Clos des Folatières, Peux-Bois and Folatières) within the vineyard allows us to have a wine that is a true representation of the cru.”  Alvina Pernot: Meursault, Premier Cru, La Pièce sous le Bois  Alvina Pernot’s wines come from a selection of her favoured sites, belonging to the Paul Pernot estate as well as an additional site in the Puligny-Montrachet lieu-dit of Noyers Bret. Three of the Alvina Pernot Premier Cru cuvées – La Pièce sous le Bois, Les Chalumaux and Champ Gain – are at some of the highest altitudes in the Puligny and Meursault appellations. While Alvina admits it is difficult to generalise, these higher-altitude vineyards produce wines that are less opulent and more tense. There is however a noticeable difference in the Premier Cru La Pièce sous le Bois in Meursault. While the altitude brings distinct freshness, the soil is not the same limestone rock of Puligny. It is a thicker clay more typical of Meursault. Despite the altitude, the wine therefore has weight and power, but with an added freshness unusual for lower sites in Meursault and showcases the brilliant contrast of power and vibrancy Alvina brings to the appellation. The Pernots of Puligny: a family divided by tradition and modernity

Sono passati 20 anni da quando Eduardo Chadwick radunò alcuni dei più famosi critici enologici europei per una degustazione alla cieca — una prova per rivaleggiare con il famoso Giudizio di Parigi del 1976 (quando la California dimostrò che i suoi vini potevano competere con — e battere — i migliori vini di Francia). Chadwick era convinto che i critici sottovalutassero i vini cileni — per nulla più che snobismo nei confronti della nazione. La Degustazione di Berlino mise alla prova i migliori vini di Chadwick (Viñedo Chadwick, Seña e Don Maximiano Founder’s Reserve) contro i Premier Cru di Bordeaux e un unico Super-Tuscan (la Solaia di Antinori). Chadwick incaricò il compianto Steven Spurrier di condurre l’evento. “Non avrei mai immaginato che ciò che stava per accadere sarebbe accaduto,” mi dice Chadwick.  Ma, per Chadwick, un momento spartiacque non bastava. Ripeté la degustazione, prima a São Paulo, poi a Tokyo — e avanti, organizzando la stessa degustazione alla cieca 22 volte in tutto il mondo, ottenendo risultati parimenti spettacolari per i suoi vini. Serve nervi d’acciaio — e una buona dose di ego — per essere disposti a rischiare ripetendo una simile prova, eppure Chadwick fu giustamente premiato. La sua campagna è solo uno dei modi in cui ha tracciato un percorso per il vino pregiato cileno — con una determinazione implacabile e ostinata. Chadwick è la quinta generazione della sua famiglia a fare vino in Cile. Don Maximiano Errázuriz emigrò dai Paesi Baschi e fu il primo a piantare viti nella Valle di Aconcagua nel 1870. Individuò la località, a 100 km a nord di Santiago, con le sue brezze oceaniche fredde, estati calde e inverni piovosi, come perfetta per la coltivazione della vite. Operando sotto il motto “dalla migliore terra, il miglior vino”, piantò viti in questo sito idilliaco, vicino a Panquehue, e costruì una cantina — che ancora oggi esiste. 
 Gradualmente, l’azienda crebbe — diventando il vigneto più grande del mondo di proprietà di un singolo individuo, con 1.300 ettari coltivati al suo apice alla fine del XIX secolo. Nonostante questa prosperità iniziale, l’industria vinicola cilena non continuò a fiorire. Non esisteva un mercato d’esportazione e il consumo interno (che arrivò fino a 80 litri pro capite l’anno) venne decimato da pesanti tasse, mentre turbolenze politiche ed economiche, con regimi comunisti poi militari, misero in crisi non solo l’industria, ma la nazione. All’inizio degli anni ’80 il vino costava meno dell’acqua e circa la metà dei vigneti del paese venne estirpata. Fu in questo scenario instabile che arrivò Eduardo Chadwick. Si era inizialmente formato come ingegnere industriale prima di decidere di concentrarsi sul vino, andando a studiare a Bordeaux sotto il leggendario enologo Émile Peynaud. Suo padre riacquistò la cantina di famiglia alle banche, e Chadwick iniziò a spolverare le ragnatele, riaprendo Viña Errázuriz e — armato di nuove conoscenze tecniche — realizzò la prima annata del Don Maximiano Founder’s Reserve, il vino di punta della proprietà, nel 1984. L’operazione era ancora rudimentale — con tinozze in rauli (un legno nativo), nessun controllo della temperatura e viti allevate a pergola nei fondi fertili — ma fu un primo indizio di ciò che era possibile. Degustando quel vino quattro decenni dopo, ha retto sorprendentemente bene — con vivacità al naso e un profilo cesellato e sapido di puro Cabernet Sauvignon. 
 Gradualmente, Chadwick investì in attrezzature — serbatoi in acciaio inox, presse moderne e botti — e iniziò a impiantare vigneti sulle pendici con suoli più poveri. Parallelamente a questo cambiamento, le elezioni decisive del 1989 riportarono il Cile alla democrazia — e figure chiave del mondo del vino iniziarono a visitare. Presto i vini di fascia d’ingresso vennero esportati da realtà come Oddbins e Victoria Wine. Le porte si erano aperte per il vino cileno. Robert Mondavi visitò Chadwick nel 1991 — e i due uomini si trovarono in sintonia, condividendo un’esigenza inesorabile di spingere avanti la loro industria, e Mondavi riconobbe in Cile il potenziale che aveva visto a Napa negli anni ’60. Sapeva che la sua partnership con Château Mouton Rothschild (Opus One) era stata fondamentale per cambiare la reputazione di Napa — e la coppia sperava che la loro joint venture potesse fare lo stesso per il Cile: nacque Seña (letteralmente “segnale”). Bob Mondavi junior, Tim, collaborò con Chadwick al progetto e suggerì di cercare un sito più vicino alla costa nella Valle di Aconcagua, in cerca di ancora maggiore finezza, producendo la prima annata nel 1995. 
 E Chadwick non si fermò lì. Suo padre aveva acquistato un fondo nell’Alto Maipo nel 1945, sede di un campo da polo (Alfonso, il padre di Eduardo, era stato per anni capitano della squadra cilena). Nel 1992 Chadwick convinse il padre a lasciargli trasformare il campo da polo — con i suoi puri suoli ghiaiosi e un’escursione termica di 15˚C — in un vigneto, ritenendolo perfetto per il Cabernet Sauvignon. Alfonso morì l’anno successivo, ma la prima annata di questo progetto — Viñedo Chadwick, chiamato in onore del padre — venne realizzata nel 1999. 
 Chadwick sapeva che i vini erano buoni — ma convincere il mondo di ciò fu la sfida. È chiaro per lui che il Cile commise un grande errore nel produrre in massa vini di ottimo rapporto qualità-prezzo, di ingresso — buoni, ma non vini di pregio — una fascia di prezzo che finì per definire la nazione. “Per questo fu molto difficile convincere il pubblico che possiamo anche produrre vini di livello mondiale,” dice Chadwick. “Il Cile non aveva riconoscimento. Non avevamo valutazioni, punti Parker, punti Suckling.” E così si mise al lavoro per cambiare la situazione con la Degustazione di Berlino. Con i risultati che scossero il mercato (poi riecheggiati in tutto il mondo), creò una spinta al cambiamento. Un decennio dopo, superò un altro confine: il Viñedo Chadwick 2014 divenne il primo vino cileno a ottenere 100 punti (da James Suckling). Solo l’anno scorso, l’annata 2021 è stata il primo vino cileno valutato 100 punti dalla Wine Advocate. Quando mi sedetti con lui a marzo di quest’anno, fu in occasione di un evento che rendeva omaggio ai due decenni trascorsi dalla Degustazione di Berlino — con le prime annate di ogni tenuta e i loro più grandi successi. Il Seña 1998 fu particolarmente notevole — una vendemmia fresca che oggi è profumata, elegante, brillante e di incredibile persistenza. Qualsiasi dubbioso sul vino cileno rimase immediatamente in silenzio. E, come per la degustazione di Berlino, l’evento veniva replicato in tutto il globo — la campagna per promuovere il vino cileno non finisce mai. 
 Quando Chadwick iniziò nel 1983, Viña Errázuriz aveva appena 10 ettari di vigneto. Oggi, nelle loro tenute, Chadwick coltiva 900 ettari di vigna. Comprò le quote dei fratelli anni fa, quando scoprì che erano più interessati ai dividendi che a far crescere e investire nell’azienda. Ora tre delle sue quattro figlie lavorano al suo fianco — entusiaste del potenziale dei siti costieri (dove producono i vini Las Pizarras) e di un nuovo progetto spumante. Non sono mancate le difficoltà lungo il percorso, ma queste hanno solo alimentato la incessante ricerca di riconoscimento di Chadwick per il Cile e i suoi vini. “Dove siamo oggi supera i miei sogni più sfrenati,” mi dice, eppure è solo grazie alla sua instancabile ambizione che il vino cileno è arrivato a questo punto. Fortunatamente, sembra che i suoi figli abbiano ereditato la sua determinazione — pronti a governare il prossimo capitolo di questa epica storia.

When visiting the cellars of Domaine Hubert Lamy, you are likely to come out a lot wiser than you were when you went in. Olivier Lamy has been experimenting ever since he joined his father at the domaine in 1995, and he loves to share his findings.  On our last visit we were given two white wines blind and asked to assess them. One thing seemed immediately clear: with its deeper colour and more developed savoury tones, one wine was older than the other. “No” he replied. “They are the same age.” Okay, perhaps the reason for such variation in development is due to the wines coming from two different quality sites – a Grand Cru versus a village wine for instance? “No, it is the same vineyard,” he replied. Perplexed, the only other solution I thought must be his high-density plantings. (Olivier has planted parts of his vineyard three times the density of the norm in Burgundy, with up to 30,000 vines per hectare), the result being smaller, more flavourful berries. Wrong again.   “Wrong experiment,” he smirks, leaving us completely stumped. He presents the two bottles and the answer lies with the capsules. Both wines have the same cork closure but one has the traditional metal capsule seal, the other bottle has been dipped in wax. It is the wax capsule that seems not only younger and fresher, but more texturally complex, yet both the wines are from exactly the same vineyard, with the same vine density and vintage. It is simply the closure that has preserved one wine so much better.   Olivier has been experimenting with closures for years. There have long been concerns about natural cork, with the risk of cork taint top of the list of potential problems, but it was the issue of premature oxidation, particularly with white Burgundy, that led Olivier to investigate whether maybe the problem lay with the closure.  Despite the drop in natural cork’s popularity and their replacement with alternative, “technical” corks and screwcaps, the natural cork still has plenty of advocates, and it remains the most sustainable and natural of solutions for many. A better understanding of the causes of cork taint has vastly improved the natural cork’s reliability and reputation, yet “being a natural product there remain irregularities in the cork,” says Olivier. Natural cork is irregular in structure, therefore allowing different levels of oxygen ingress, meaning that the same wine can mature differently depending on the specific cork, and resulting in bottle variation.  Olivier also believes the irregularities of cork have become worse in recent years due to climate change, with the warmer temperatures resulting in even less consistent cork.  The benefit of the wax capsule, according to Lamy, is that it acts like a “bandage”, offsetting the irregularities of the cork. His grandfather and many other winemakers often used wax capsules for wines destined for their personal cellars; it was the reliable ageing capacity of these wines that prompted his experiments. Trialling the effects of waxed and unwaxed capsules since 2009, he decided to use wax capsules on all his wines in 2016. Over this time, he has experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer (54mm), technical DIAMs (a natural cork-based agglomerate closure), under wax seal produce the best results and best protect against premature oxidation.  Does this mean we have a definitive answer to the question that has plagued white Burgundy for the last couple of decades regarding premature oxidation? While his experiments certainly seem to imply that the irregularity of natural corks could be one of the biggest culprits and wax capsules one of the most successful solutions, he does not believe it is only the cork which is at fault. “There are two problems,” he says. “Poor-quality corks and the fact that wines are more fragile these days.”  The increased fragility of white Burgundy, Lamy believes, is a modern phenomenon. Climate change produces riper grapes, combine this with too many new barrels, modern presses that are too protective and you have wines that are more susceptible to oxidation. All too aware of this concern, many vignerons, Lamy believes, attempt to overprotect their wines, adding too much anti-oxidative sulphur dioxide (SO2) throughout the winemaking process. Counter-intuitively, this in fact makes the wines more susceptible to oxidation. When wine is made in a more protective environment, the more volatile phenolics remain in the wine, whereas these will drop out of a wine  when it is made oxidatively at the early stages of vinification, resulting in a much more stable wine.   Despite vignerons’ better understanding of the effects protective winemaking has on long-term ageing, these techniques are still used by many because it makes the wines so much more approachable in their youth. Many white wines today are built on developing these youthful aromas at the expense of ageing potential, Lamy argues. This is, he says, is in direct contrast with the past, where wines were built on texture, remaining fairly closed in their youth, with the aromas only developing with age.  There are still many traditional vignerons in Burgundy producing textural white wines built to age – with Lamy (who does not enjoy young, aromatic Burgundy) being one of them. With the warming climate, he has, however, had to adapt his winemaking to protect these more fragile wines. These days he manages the press cycle according to the vintage and allows for more solids when required.  With all the wines now bottled under DIAM and wax capsules, all Lamy can do now is wait. But, if his experiments are anything to go by, the risks of premature oxidation are low. Of course, he’s not sitting back – the dynamic winemaker is looking to experiment even more, pushing the boundaries to produce the best, and most age-worthy, wine possible.

“I met Anselme Selosse when I was 13 and that really entered in my heart. He’s really a special person that changed the world of wine [for me],” Matteo Bisol tells me. It’s perhaps not what you’d expect of the young winemaker who represents the 21st generation of the Bisol family – a family that made their name with, and has become synonymous with, fine Prosecco.  Meeting the iconic Champagne producer – considered by many the pioneer behind the region’s grower movement – has stuck in Bisol’s mind, however. Partly, he believes, because he was at just the right age – partway between child and adult, his mind open to new ideas. “He was always talking about wine as a living thing, you know,” Bisol says. “I got it and I always thought it was very important.” He’s been immersed in the family business as long as he can remember. From the age of 10, he spent his summers working in the Bisol winery. “Once I arrived in the morning five minutes late and my father fired me. And then he hired me again because he didn’t want me to leave, being at home doing nothing,” says Bisol, laughing at the memory.  But Matteo Bisol has left the hills of Valdobbiadene behind, now in charge of his family’s very personal project: Venissa. It was Matteo’s father, Gianluca that embarked on the adventure over 15 years ago – but somewhat by accident. He was visiting the island of Torcello, which is home to one of the oldest churches in Venice – founded in 639 AD. “In front of the basilica, there’s a beautiful garden – a little bit hidden – but he saw some vine leaves,” Bisol explains. “He knocked on the door of the owner and introduced himself.” Gianluca spoke to the woman that owned the garden, who told him that a few of the vines were a local golden-skinned variety – Dorona. And down the rabbit hole, he went…  He started researching the grape and its history – discovering that viticulture had long been a part of life in the Venice Lagoon. For almost 2,500 years, vines had been grown on the islands – an integral element of the region’s culture. Before motors and speedboats, the islands were a three-hour journey from the mainland, so isolated that they had a totally different culture – “a culture based on nature, based on farming”, Bisol explains. Their isolation forced self-sufficiency, with every bit of space on each island used to grow something. With religion integral to Venice and indeed Italy’s history, wine – used for twice daily mass – was an essential part of life.   This history lives on in local nomenclature: one of the islands is called Le Vignole, one was known as Vigna Murata (now Lazzaretto Nuovo), San Francesco del Deserto was previously called Isola delle Due Vigne, a road on Murano is called Via della Vigne. Many islanders made wine, with presses for the fruit of the vines in their back garden or field. But as the islands of the lagoon became less distant, with the zip of an engine, many of the vineyards were pulled up, and those that remained were destroyed by the catastrophic floods of 1966.   After this initial discovery, Gianluca Bisol started seeking out Dorona vines – a quest that Matteo remembers vividly. “Really from the beginning, I was on the boat, with the bicycles on Sant’Erasmo looking for more Dorona grapes,” he says, describing their search for a variety that was – at the time – on the brink of extinction. It was a farmer, Gastone, on the island of Sant’Erasmo who really opened Gianluca’s eyes to working with Dorona. He was one of the last farmers in Venice to still make wine for personal consumption.   “A great person, a very beautiful person and very wise – he introduced us to the Dorona history and to the way he was making the wine in the past,” Bisol tells me. Thereafter, Gianluca hunted down cuttings and eventually –in 2006-2007 – planted 0.8 hectares of Dorona on the island of Mazzorbo.   It was tradition – rather than current fashions – that led them to make a white wine with extended skin contact. The wine had always been made with skin contact, and they decided to push it further, with a month of maceration, extracting as much flavour as possible from the unique variety. They also decided that the wines needed time to find their balance after such a long period of maceration. They considered barrel ageing, but didn’t want to change the profile of the wines with the flavour of oak, so instead opted for concrete – and two years’ élevage. The resulting wines have a fine phenolic grip and distinct mineral, even saline, freshness, with a nutty complexity that is reminiscent of mature white Hermitage, Burgundy or Jura Savagnin and Chardonnay – yet also unlike anything else. It’s this unique character that Bisol feels is why the wine is such a success. “We never tried to fit Venissa in any category… we just make the wine that we feel is the right thing for Venissa grapes,” he says  Since the first vintage in 2010, and when Matteo took over in 2013, they’ve learnt a huge amount. “There are parts of the vineyard – different parcels – that have a lower salt concentration in the soil,” Bisol explains. The more saline soils restrict the yield, producing smaller and even more concentrated berries. It was this discovery that led to the introduction of Venusa, a second wine that is made for earlier drinking, in 2017 and comes from the less saline plots. Of course, with two wines, it means that the already tiny volumes of the top white, Venissa Bianco, are even smaller – with just 2,000 bottles made a year. “It’s such a small vineyard that we know the plants one by one,” Bisol says, with an almost paternal fondness.  With each vintage, as well, they have pushed quality even further – learning how to get the most from the previously almost extinct Dorona. They’ve been making the wine for 20 years, but – as Bisol says – “Twenty years means you made it 20 times. Twenty times is nothing. Every year we see how the wine is responding, and we learn every year more things that allow us to make better and better wines.”  And making wine in this remarkable place, with its salt-soaked soils, is far from easy – something that the flood, or “acquaalta”, of November 2019 brought vividly to life. Although the vineyard is shielded by a wall, it couldn’t hold back the water – and once receded they had to wash the vines one by one with fresh water, and the soil as well, to try to remove the potentially catastrophically high salt content. It was only when the vines emerged from dormancy in the spring that they knew whether or not they’d done enough to save them.  “It also reminded us how resilient this grape variety is, which is actually the resilience of Venice – which has been a city or republic for more than 1,000 years,” Bisol says. The Dorona grape, like the region’s people, has adapted to its surroundings. Fortunately, with the introduction of MOSE in 2020, the city’s barrier system designed to shield it from high tides, flooding hasn’t threatened their crop – and vineyard – since.   It's clear talking to Bisol, that Venissa is much more than a wine. Not only is it a symbol of Venice’s resilience, but a project to preserve the city’s great traditions.The glass bottles come from the island of Murano, but it’s the labels that are particularly special. They work with Marino Menegazzo of Mario Berta Battiloro, the last goldbeater not just in Venice, but Europe – who hammers out a sheet of goldleaf for each and every bottle they produce, from the workshop that once was home to Titian. The design changes each year, with the leaf for each bottle very slightly different thanks to its hand-crafted nature. With Marino Menegazzo in his 70s, and no one to inherit the family business, this tradition – like the Dorona wines – is at risk.  “This part of the history of Venice, it’s an history that is very important and our role at Venissa is really to keep this history alive,” Bisol says. “For us, winemaking is really important, of course my family comes from winemaking, it has a history of 500 years in winemaking. But when we realised the history that was behind this city, behind agriculture and grape growing, and behind all these other handcrafting techniques, it became even more important for Venissa, as our role of preserving the heritage rather than just making a wine… We really believe that preserving our tradition is even more important than winemaking.”   While the family started with just 0.8 hectares on Mazzorbo, they soon started making a red from 2.75 hectares on Santa Cristina (with vines that were previously farmed by the Swarovski family). Now, they’ve planted Dorona on two more islands, harvesting the fruit for the first time this year.
