Pale, bright color. Perfumed, ineffably pure aromas of lemon, lime, powdered stone and spring flowers. Wonderfully pure, sharply delineated and gripping, with intense flavors similar to the aromas. Extremely unevolved and almost painful today, offering an uncanny combination of elegance and thrust. The concentration of flavor is amazing for a wine with 12.5% alcohol. (Dauvissat notes that the 2005 version is a full degree higher, which he emphasized has produced two very different styles of wine. I would buy and cellar either in a heartbeat.)

The 2004 Chablis Forest offers a richly aromatic nose of candied pears and salty minerals. This medium-bodied wine is crammed with fleshy white fruits, sea shells, salt, spices, iodine, and notes of fresh mint leaves that linger in its lengthy, seamless finish. Creamy nose. Cool, subtle vanilla, but not dominated by oak. Explodes in the mouth with restrained power. (JH)
Also from feuillette: Candied lime peel, orange zest and crushed stone. Dense and sweet in the mouth, with flavors of powdered stone and sweet citrus fruits. Offers wonderful energy and depth, and opens out impressively on the slow-mounting, vibrant finish. Dry and classic. An outstanding premier cru Chablis in the making.
