Note di degustazione
Aromas of pear, clear honey, nutmeg and toasted hazelnuts introduce the 2023 Saint-Aubin l'Ebaupin, a medium to full-bodied, satiny and layered wine that's chalky and vibrant, with a lively spine of acidity.

On a steep 38% slope facing La Rochepot. 25% new barrels. Tank sample. Mid lemon. High, racy acidity. Ripe apple, pear and lemon, chalky texture. Quite dense and with some flesh. Dry finish, long and mineral. (MH)
The 2023 Saint-Aubin En L'Ebaupin was showing more reduction in the glass, though Sébastien Caillat told me that it was less than in barrel. There will be two more rackings plus a second winter on the lees. The palate is very well balanced with a brisk line of acidity. This has wonderful tension from the start. It's perhaps a little more saline than the 2022, with an elegant, harmonious finish. This is Premier Cru in quality.
