The 2009 Chablis Les Preuses impresses for its sensual personality. Layers of expressive fruit wrap around the palate in this supple, juicy Chablis. A hint of oak adds the final note of complexity and nuance. Anticipated maturity: 2013-2021. (Not yet released) Sebastien Dauvissat is among the growers who prefer steel over oak for the vast majority of his wines. He also ages the wines for two years before bottling, which means he had not yet bottled most of his 2009s at the time of my visit in June, 2011. The 2010 harvest began on September 25th, a bit on the early side relative to the rest of the village. The approach to oak and aging on the lees varies with respect to the year. For example, in 2009, Dauvissat kept the fine lees, but in 2010 he did not. This is one estate I visited where the 2009s appear to have better overall balance than the 2010s, many of which come across as quite round for the vintage. (a cuvee aging in nine barriques , two new): Aromas of lemon-lime, vanilla and coconut. Sweet and silky on entry, then more austere in the middle than the Vaillons VV, with good mineral cut to the lemon and floral flavors. The oak has provided a slight rounding influence but comes across as rather pronounced today. Will this evolve gracefully in bottle?

(in older barrels since the first racking) Here the spicy oak component is in better harmony with aromas of lemon, minerals, white flowers and crushed stone. Very rich and plush, with the sweetest fruit of any of these 2009s. I find the flavors of lemon, pineapple and minerals to be very agreeable today. Boasts terrific early texture and pliancy. In fact, Dauvissat told me he's afraid that people will drink this wine too soon.
