Fusil and musky narcissus aromas mingle with white peach and grapefruit in the nose of the Billaud-Simon 2007 Chablis Preuses and a slightly kinky, decadent florality persists on the palate, along with accents of peach kernel and iodine to its persistent fruit. This displays less clarity or finishing savor than the corresponding Vaudesir, but is certainly striking and impressively persistent. Here’s another Billaud bottling to revisit soon for hints to its possible destination and perhaps of additional harmony. I suspect it will be worth following for at least 6-8 years. Bernard Billaud agreed this year to show me his young grand crus in advance of their anticipated May or June bottling, even though they were on their finings. (still in a small barrel) Exotic spices, pineapple and a whiff of resin on the nose; seems slightly tired. Offers good volume but the resiny quality carries through in the mouth and some slightly sour acidity gives the middle palate a disjointed quality. Softer than the Vaudesir but less balanced. Not my style. I'm not sure why this hasn't already been bottled.
