2016 Domaine Carneros Le Rêve Rosé

A blend of 55% Pinot Noir and 45% Chardonnay. The fruit is whole-cluster pressed and fermented in steel, with the Pinot Noir getting a few days of cold maceration before pressing. Proprietary yeasts. Aged six years on the lees in the bottle. Dosage 9 g/l. Pale peach, with very fine bubbles. Smells of strawberries, toasted brioche and citrus peel. A silky mousse delivers citrus peel, toasted bread and seawater, all lingering through a very long finish. Wonderfully delicious. (AY)
