100% Malvasia Bianca di Toscana. Harvested last 10 days of September 2000. 102 days’ drying on vertical racks. Fermentation for six years and two months in small oak, mulberry and cherry-wood barrels. Bottled 30 March 2007. 12 months in bottle before release. TA 5.98 g/l, pH 3.85, VA 1.98 g/l, RS 327.6 g/l . Deep amber-brown, with a deeper core than the 2001. Fudgy, with a dried and cooked citrus-peel sense, perhaps accentuated by the volatile element. The nose is enriched by dried cherry, hazelnut and walnut, and a dark-chocolate undertone. Super-rich, very sweet and full, with fig, some dried banana, spice, toasted hazelnut and dark chocolate. A sticky toffee pudding might be sweet enough to stand up to this! (TJ)

Blackish tawny. Treacly lift, and rich. Very complete and unspittable. Lovely acidity beautifully counterbalances the sweetness. (JR)

Rocca di Montegrossi's 2000 Vin Santo, which is one of the most exotic, personality-driven sweet wines being made in Italy today. Ricasoli dried his Malvasia for 5 months, then vinified the wine and aged it for six years in a succession of small barrels made from a variety of woods, including cherry and oak. The exclusive use of Malvasia gives this wine an exotic profile encompassing a veritable kaleidoscope of coconut, baking spices, leather, espresso, caramel and dried fruits. Despite its extreme concentration and weight, the wine offers outstanding balance and poise. It could very well overpower even the strongest cheeses and is probably best enjoyed on its own. This is the most full-bodied, exotic Vin Santo being made in Chianti Classico. 375 ml
