Just under Clos des Mouches (some goes into Bouchard’s Beaune du Château). 80% hail loss. Some belongs to the Hospices. 16 hours for eight people to sort 1 tonne. Therefore only 5-10% whole bunch, occasional pigeage at the end. Lightish cherry red. Peppery red-fruit aroma. Firm but finely dry and textured. Relatively light but that dry (but not drying) texture adds persistence. Scented at the core though the texture leads the way at the moment. (JH)
