Note di degustazione
(bottled in February): Palish, green-tinged yellow. Aromas of pear, minerals and wild herbs reminded me a bit of Benedictine. On the lean side but boasts lovely juicy cut to its lemon and lime flavors. No shortage of acidity here.

The 2016 Saint-Aubin Le Banc is another pretty wine from Pierre-Yves Colin, exhibiting expressive aromas of white flowers, tangerine oil and crisp apple. On the palate, it's medium-bodied, pure and glossy, with attractive detail and delineation. Structurally delicate and open-knit, this is a wine to broach while the 2015 is maturing in the cellar.
Pneumatic presses that are very gentle and keep all the lees. Racked two months ago to tank. Now that all his wines stay in the same cellar until bottling, he can rack less and invest in a longer future for the wines. Quiet, stony, citrus nose. Some herbs. Very very tight and crisp, super-precise and elbows all tucked in. Opens up to a pretty hint of blossom. (JH)
