Note di degustazione
The 2019 Rosso Seraphina wafts up with lavender and violet shades giving way to savory cherry sauce and smokey crushed stones. This is pure elegance on the palate, smooth like silk yet finessed, with polished red fruits flowing effortlessly across a vibrant acidity core. The 2019 finishes structured and long, dazzling with lingering notes of salted licorice and red plums that harmoniously meld with its grippy tannins. Frankly, the best is yet to come, but I’m already finding a lot to like. The Seraphina is a varietal Sangiovese refined in cement and large neutral oak.

Full bottle 1,254 g. 100% Sangiovese, farmed organically and biodynamically. 25-year-old vines on sand, silt and clay. 350 m asl. Spontaneous fermentation in 500-litre amphora where they are aged for six months followed by two years in cement vats. Total added sulphites 40 mg/l. Unfiltered, unfined. 530 bottles. Peppery, violets and plums. An almost Pinot-like, burgundian translucency, fluency, reticence. Low-pitched and quietly thrumming with breathy, cool, unhurried energy – like an early morning breeze picking up over the hillside and softly huffing at dry grass, creating tiny dust eddies, bending lavender flowers and rustling olive-tree leaves like tiny tambourines.
