Luckily for Pavelot, their parcel of Beaune Premier Cru Les Bressandes didn’t get hit by frost in 2021 and you can see that the wine has retained great density as a result. The dark ruby colour further emphasises the concentration here, with a bouquet of fresh red berries and minerality. The medium-bodied palate has great energy and power with elegant tannins thanks to the calcarious soils. The vines here struggle more and tend to develop more slowly in the season – something which probably saved the crop. The mid-palate offers excellent complexity, with a delicate nerve of acidity, wild strawberry aromas and a long, crunchy, red-fruited finish. This is top wine. Drink 2025-2036+.

The 2021 Beaune Les Bressandes 1er Cru, which was not touched by the frost resulting in four barrels instead of the previous years two-and-a-half, has a vivacious bouquet with red berry fruit and orange zest. Wonderful delineation. The palate is medium-bodied with saturated tannins, lively and tensile with ample depth and quite a mineral-rich, persistent finish. Excellent.
