The 2015 Chablis Vieilles Vignes comes from 55-year-old vines and is matured for 18 months in 35% oak barrel, the remainder in stainless steel. It has a slightly more subdued bouquet compared to the 2015 Chablis Cuvée Emeraude, although it soon gains more energy and conveys more mineralité. The palate is well balanced with a fresh, orange-rind tinged entry, a judicious touch of spice and a brisk, quite persistent finish with hints of passion fruit. This is just a lovely Chablis that is premier cru level.
