Note di degustazione
The 2016 Chablis, 20% matured in French oak, is subdued on the nose, a little dour compared to some of its peers. Perhaps it just needs more aeration? The palate is medium-bodied and well balanced with Granny Smith apples, light spicy notes of lemongrass, quite detailed if not persistent towards the finish. Fine. Tasted blind at the BIVB Chablis tasting.

Smells as if there is more oak influence here but more in a mealy note than in oak aroma. Gentle but fresh on the palate, the mineral character clear on the finish. (JH)
(done entirely in cuve ): Medium yellow. Apricot, yellow peach and a touch of banana on the nose. Fat, spicy and lightly saline, conveying musky lime oil and ginger flavors. Less reduced than the Petit Chablis, which needs a racking. Good material here, if a bit lower in acidity than the Petit Chablis at 4.3 grams per liter. Finishes nicely dusty and dry.
