The 2014 Chablis 1er Cru Vaillons Cuvee Guy Moreau has a similar bouquet to the 2015: citrus peel and lime flower, that undertow of tropical fruit, though there is more precision here vis-à-vis the 2015. The palate is very well balanced with crisp acidity, harmonious and poised. Quite steely in style, it contains plenty of coiled up energy that should see it give a decade of pleasure. Excellent.

Fresh orange rind on the nose – really pretty aromas. Dry, firm, and with a faint wet-stone note to finish. (RH)

Bright yellow-green. Aromas of mirabelle , spiced meat and sexy oak, lifted by spices, mint and lavender. Rich and creamy on the palate but quite dry and penetrating too, with a spicy character carrying through on the long finish. This is much less harmonious today than the regular Vaillons as the malolactic fermentation only finished in early May, vs. January for the other wine. Fabien Moreau planned to take it out of oak soon after my visit.

Deeper and richer on the nose than the classic Vaillons, offering scents of citrus zest, menthol, spices and minerals. Larger in structure and more important than the basic Vaillons, but with its density nicely leavened by lovely vinosity. With its greater size and more obvious oak component (15% aged in oak), this is a Chablis for the table. Finishes with lovely breadth and length. Made from very ripe fruit, this is the lowest in acidity among the estate's 2014 along with the Clos des Hospices.
