5-10% fermented and aged five to six months in old barrels, the rest in tank and aged therein for 10-12 months. Light notes of citrus and cedar, more open and expressive than some. With the rounded texture of that oak-fermented portion determining the overall style though there is no oak flavour. Gentle and creamy but still very fresh on the longish finish. (JH)

Baked apple, fluffy texture, creamy but with a good shot of acid on the palate. In fact, the finish is almost too sour, if anything. (RH)
The 2015 Chablis (Domaine) comes from 48 hectares of Fevre's own vines located close to Premier and Grand Crus, the average age of vine is 40 years and the grapes are picked by hand. The nose is a little closed at first with hints of caramelized pear and a touch of white peach. The palate is clean and fresh, tightly wound and steely at the moment, with respectable salinity for a 2015. There is impressive definition and mineralité on the finish, considering this is a Village Cru. This comes recommended.
