The 2003 Chablis Vaillon 1er Cru is an intriguing, quirky wine that shows just how challenging this vintage was. Deep in color, the 2003 is rich and viscous in the glass, with plenty of honey and roasted nut character, and at the same time, it is showing clear vegetal notes that are a sign of heat stress during the most unrelentingly hot, dry growing season ever recorded. Powerful and phenolic in its intensity, the 2003 is most certainly a wine to pair with rich foods.

The 2003 Chablis 1er Cru Vaillon is a dramatic, unctuous wine, bursting with rich aromas of preserved citrus and yellow orchard fruit. On the palate, it's full-bodied and lavishly textural, with considerable flesh and amplitude. It's still in the prime of life and presents considerable potential for interesting culinary parings, though with its weight and ripeness it's far removed from the stereotypical Chablis.
