The 2007 Chablis Blanchot Grand Cru is one of the most intriguing Raveneau wines I have tasted in a very long time. Very awkward at first, the 2007 was really only enjoyable after having been opened for a few days. At first, the 2007 presented a strong contrast between the natural richness of a Chablis with a good bit of bottle age and the natural freshness of the cool year. The wine was disjointed, and there was really no pleasure to be had at first. And then the Blanchot suddenly blossomed a day after having been opened. Those initially angular edges had softened, and the wine was simply exquisite, with tremendous polish and refinement.

At age ten, the 2007 Chablis Grand Cru Blanchot is still an adolescent, and a few more years of cellaring are recommended, but its quality is readily apparent. The wine unfurls in the glass with notes of lemon oil, fresh pastry, honeycomb, oystershell and dried white flowers. On the palate, it's full-bodied, layered and textural, with chewy old-vine extract, succulent acids and a deep, youthfully vibrant core. This represents an enticingly gourmand expression of 2007 Chablis and ranks as one of the vintage's highlights. I'd start pulling corks in earnest from 2020.

Pale, green-tinged color. Highly perfumed aromas of powdered stone, ripe citrus fruits, spearmint and flowers. Juicy, citric and tight in the mouth, but with a very ripe hint of pineapple lifted by flowers. Showing less texture today than the Montee de Tonnerre, but this normally sunny site performed well in the cooler 2007 growing season. This is 12.7% alcohol after a bit of chaptalization.

Good pale color. Lemon and stone on the nose; I got a suggestion of fresh goat cheese. Dense and gripping in the mouth; a step up in energy and cut from the premier crus. Classic flavors of lemon and crushed stone. Finishes saline and long, with a piquant grapefruit flavor and terrific stony persistence. This east-facing site benefited from the morning sun in 2007, noted Raveneau, suggesting that it was less favored in the warmer 2006 growing season.
