Very pale, green-tinged color. Captivating aromas of lime, powdered stone, confectioner's sugar and mint. Dense, lush and sweet, with a piquant sugar/acid balance and enticing lime and mineral flavors. This has creamy old-viney depth and a terrific core of sweetness. Finishes very strong, tactile and long.

The only negoce offering I tasted from William Fevre was the creamed nut-scented 2002 Chablis Mont de Milieu. Its lactic personality displays hazelnuts, flint, and minerals as well as a distinctive note of lemon that appears in the finish. Drink it over the next 2-3 years.

(from three parcels of purchased grapes; Hervet says William Fevre would love to be able to buy these holdings) Apple and a strong flinty silex component on the nose. Dense, chewy and sweet, with excellent delineation of flavor. Offers a creamy old-viney texture but is currently showing less personality than the Vaillons. Still, this is suave, rich and very long, finishing with a dusty impression of soil.
