White peach, yellow cherry, and white currant suffused with chalk and alkali dominate Billaud-Simon’s 2008 Chablis Fourchaume, which displays firmness yet refreshment on the palate and peat-like smokiness along with bitter fruit pit hints in its finish. Broader than the corresponding Mont-de-Milieu and less focused or long-finishing, it is nonetheless a highly promising candidate for following over the next 4-6 years. Bernard Billaud agreed this year to show me his young grand crus in advance of their anticipated May or June bottling, even though they were on their finings. Good pale yellow. Subdued but pure aromas of citrus fruit, white flowers and hazelnut. Lightly honeyed but minerally and tight in the style of the year. Finishes with good acid cut and a hint of alcohol. Today I find the 2009 version a bit more typical of the vineyard if less intense.
