Hazy appearance. Apple, spearmint, butter and minerals on the nose. Then densely packed but uncompromising, with terrific mouth-saturating energy. Finishes chewy and brisk, with saline minerality. (The larger-scaled Vaillons, which still was finishing its malo, seemed equally successful, combining sexy almond pastry and orange zest aromas with strong, chewy finishing minerality. The Fourchaume had barely started its secondary fermentation.)
