Every now and then, the word ‘singularity’ is used to describe a particular wine that stands apart, for whatever reason, from other wines of its type. But just what is singularity, and how can wine express it? Wine writer Tamlyn Currin investigates.

Whilst for some of us a trip to Italy still seems far away, this postcard from Florence provides us all with inspiration for our future adventures. As a wine lover and epicurean, how would you best spend 24 hours in Florence? 
I’m a great epicurean or as we say here in Italy I’m completely into “dolce vita”. Florence has so much to give that after one life spent here I’m still surprised and astonished by the beauty you can find behind every corner. I love to have an early morning walk along the Arno river, there is a very easy path that follows the two banks.  Walking from bridge Santo Spirito to San Niccolò bridge and back when the city wakes up gives me cheerfulness and the good mood to start the day. A good espresso in one of the many caffetterie on the way and life smiles! If the day is not too hot I’ll probably climb the hill of Michelangelo from the San Niccolo gate and enjoy the best view of the city from Piazzale Michelangelo and the church of San Miniato. 
 At this point, I’ll probably descend from “via dell’erta canina” for a sandwich and a glass of wine at “Fratellini”, one of the oldest and most traditional kiosks of the city! Ill end the day resting in Boboli garden, the Medici private backyard of Palazzo Pitti before heading to “Santino” for a classic aperitivo in the smallest and cutest bar of the city. 
What are your top drinking spots in the city? 
When it comes to wine Florence has a lot to offer. The best places to enjoy a class of wine will be the Sesto, terrace bar of the Excelsior Hotel or the rooftop bar of Hotel Lucchesi, both with an amazing view and great wine lists. But my favourite place is Aurora, our new winery in Fiesole, with an amazing terrace overlooking the city of Florence, Chianti and the hills that frames the city. What is your favourite neighbourhood restaurant in the city?
 I love the traditional restaurant Cammillo, it is one of the oldest Trattoria of the city, still managed by the same family. It is chaotic but the atmosphere is warm and the menu rich of traditional dishes hard to find elsewhere. 
 What is your favourite dish they serve? 
Trippa alla Fiorentina, amazing! 
What are the culinary specialities of Florence and the surrounding area? 
Florence has a very rich cuisine, starting from aged salami, cheeses and charcuterie like finocchiona (made by the leftover of the pigs), but also pasta and soups like Ribollita (winter black cabbage and bread soup) Pappa al pomodoro (summer tomato and bread soup) or Tagliatelle that could be served with Cinghiale (wild boar) Lepre (hare) but the king of our cuisine is the Bistecca Fiorentina, a 2 kg steak served rare to medium-rare and made of Chianina beef. But don’t forget desserts like “Zuppa Inglese” or Cantucci and Vinsanto, the best way to end a heavy meal! 
If budget was not an issue where is the finest place to dine in Florence? 
Easy to answer: Enoteca Pinchiorri (three-Michelin), amazing food and probably the best wine list in the world. I’m very linked to this restaurant, it was my very first client in the world and for a few years Pinchiorri got all my production of Colore purchasing until the last drop of the wine! 
Florence has some world-class cultural sites. What is your favourite place to visit? 
My top three are: the Uffizi museum, you can’t leave Florence without a view of Venere and Primavera of Botticelli (and a good coffee on the rooftop bar of the museum), Santa Maria del Fiore (the duomo) with the adventurous walk to the top of the church and last but not least a visit to Fiesole village with its beautiful monastery. 
Is there an off the radar place in Florence that visitors should not miss? Florence can be very touristic and loud during high season but there are some places a bit off the radar like the “Giardino delle Rose” (the roses garden) beautiful in spring with hundreds of different roses or when open the Forte Belvedere with the Garden of Villa Bardini. 
 Florence is closely situated to the world-class wine regions of Tuscany – Where are the best places to visit for scenery and to discover the wine country? 
I will base myself on the hills overlooking the city, Fiesole can be the perfect base to visit the city and get out of the crowd when necessary. And from there move to Chianti Classico, Panzano in Chianti and Castellina are two lovely villages 30-40 mins away. If the plan is to visit Bolgheri or Montalcino better to base yourself on the coast or Siena. 
Where is the best place to enjoy your wines in Florence? 
I’m proud to say that our wines are considered the “local wines” in Florence, my winery is the closest winery to the city and I have been privileged for this reason, I’m the Florentine winemaker and my wines are very easy to find in most of the places in Florence. I get the occasion to toast to all our friends that I am sure I will be able to meet here again soon with a good glass of wine. Read more Editorial

Introduction The Côte d’Or, the Golden Slope, enjoys a reputation and exerts an influence in the wine world out of all proportion to its size. It possesses none of the grandeur of the Douro Valley, for instance, nor the picture-postcard beauty of South Africa’s winelands. It is not majestic; its beauty is serene, and what strikes the observer time and again is the tiny scale. From north to south it is about 50 kilometres long, is sometimes less than a kilometre wide, and can be driven in little more than an hour. At a push it could be walked in a day. Yet for a thousand or more years this favoured slope has yielded wines that have entranced and delighted wine lovers, with a fair measure of frustration and disappointment thrown in too. Avoiding hyperbole when writing about the Côte d’Or is a problem, for it has held people in thrall for centuries, frequently prompting poetic flights of prose: ‘The Pathetic Fallacy resounds in all our praise of wine … This Burgundy seemed to me, then, serene and triumphant … it whispered faintly, but in the same lapidary phrase, the same words of hope.’ Thus wrote Evelyn Waugh in Brideshead Revisited eighty years ago. Literary critics might cavil at such prolixity, and Waugh himself tamed it severely in later editions, but it was enough to intrigue me decades ago and engender a love for the region and its wines that has never waned. Greater Burgundy is a bigger, more geographically diverse, region than might first be supposed, stretching from Chablis, south-east of Paris, to Beaujolais, north of Lyon. The subject matter of this book, however, is Burgundy’s heart, the Côte d’Or. There is no more celebrated stretch of agricultural land on earth. It has been pored over and analysed, feted and cosseted, obsessed about and sought after for centuries and today, if anything, it exerts a greater pull on wine lovers than ever before. ‘Astronomical’ does not begin to describe the prices now being paid for prized patches of grand and premier cru vineyard, and for the wines produced from them by the top domaines. Such prices hog the headlines and paint a dazzling, though severely one-dimensional, picture of the Côte d’Or today. In the early years of the twenty-first century they are part of the story but they are not the only part. This book aims to get behind the dazzle and flesh out the story, to add some nuance and extra dimension. The Côte d’Or cannot be captured in a sound bite nor, it must be admitted, in a book of this scope – but my hope is that it may add another chapter to the ever-unfolding tale, setting it in the early years of the twenty-first century, a period that may come to be considered by future historians as a golden age for Burgundy but which has brought its own challenges in the shape of those ludicrous prices, the scandal of premature oxidation in the white wines, and the increasing challenge of dealing with extreme weather events such as hail and spring frost. The Côte d’Or has been the subject of forensic scrutiny for centuries, generating a library of books, so why another one now? For the simple reason that it is ever changing. Every year sees new names added to the producers’ roster and old ones slipping away, and thanks to this ongoing evolution the infant domaine of today can be the superstar of tomorrow. The core of the book comprises about a hundred producer profiles. Many fine domaines and négociants whose wines I am happy to purchase and drink have not found a place here. It is important to stress that they have not been included, rather than excluded, simply for reasons of space. The aim was to feature a representative collection of producers, not a top-down selection of the most celebrated names in descending order of renown. As a consequence this book is not, nor was it ever intended to be, a comprehensive A to Z of producers. I write as an amateur du vin, an enthusiast whose admiration for the wines of Burgundy stretches back over four decades, and who has been visiting the region and writing about the wines for some thirty years. I do not trade in wine. I try to see beyond the wine to get something of the backstory, the story of people and place that makes the Côte d’Or so fascinating. To examine the wines in isolation is to dislocate them from that, and not knowing something of the backstory precludes a full understanding of them. A broad lens must be brought to bear on the côte. Too narrow, and the wood will never be seen for the trees. I have learned much by coming across things serendipitously rather than dashing hither and thither, seeing a lot but noticing little. Without time for assimilation and reflection, subtlety and shade are missed. Finally, no gustatory experience can match the thrill of a great Côte d’Or red drunk at its peak. The colour, crimsoned by age; the heavenly scent, perfumed with notes of sweet decay; a sauvage edge, the palate lively and tingling, managing to be so many things at once, oscillating between fruit and spice and meat and game, a merry-go-round of flavour, spiralling on the palate, refusing to be pinned down by anything so prosaic as a tasting note. All the primary components melded by age and yielding up new ones, unsignalled when the wine was young. Everything cohesive and in harmony, like a great orchestra playing at its best. Above all, vital and living, endlessly enchanting and intriguing, engaging the palate and the spirit like no other wine. Maylis Marcenat non rientra nello stereotipo del produttore bordolese. Vivace, con i piedi per terra e umile, è la più tranquilla che ci sia. È la quarta generazione della sua famiglia a gestire Clos de Sarpe, una piccola tenuta Grand Cru Classé Saint-Emilion che da tempo è passata sotto il radar. 
La storia del Clos de Sarpe 
Il nome Clos de Sarpe compare per la prima volta nel 1897, dato da un certo signor A. Ducarpe alla sua proprietà sull'altopiano della Sarpe. Il barone Henri du Foussat de Bogeron acquistò il vigneto nel 1905, unendolo ai vitigni della vicina Badette per creare Ch. Haut-Sarpe. Jean Beyney acquistò Clos de Sarpe nel 1923 e fece rivivere il nome originale. Suo figlio, Yvan Beyney, subentrò nel 1952, che a sua volta passò la proprietà a suo figlio Jean-Guy Beyney nel 1986. Jean-Guy possiede ancora oggi la tenuta ma si ritirò nel 2021, cedendola a Marcenat, che è sua nipote. (Jean-Guy ha un figlio, Charles, che dà il suo nome al secondo vino della proprietà e alla fine erediterà Clos de Sarpe ma non è interessato a gestirlo giorno per giorno.) 
Lo stile dei vini Clos de Sarpe attraverso i secoli 
Lo stile e la vinificazione si sono evoluti nel tempo, con ogni generazione che ha lasciato la propria impronta sui vini. Inizialmente il vino veniva fermentato tutto a grappolo intero, con lunghe macerazioni (dai 40 ai 50 giorni) e trascorreva diversi anni in vasche di cemento prima dell'imbottigliamento. In effetti, sotto Yvan, ciò continuò. Vendeva vino solo a coloro che sapevano conservarlo correttamente, e come tali alcuni vini trascorrevano lunghi periodi di tempo in cisterne: ad esempio il 1966 rimase nel cemento per 10 anni. Yvan cercava la purezza del frutto, raccogliendolo relativamente tardi (era sempre orgoglioso di dire di aver raccolto contemporaneamente a Figeac, dice Marcenat) e non usava mai il rovere. I vini erano duri in gioventù, avevano bisogno di tempo per ammorbidirsi, ma avevano una grande stabilità grazie al loro lungo affinamento. 
Sotto lo zio di Marcenat, arrivato nel 1986, le cose iniziarono a cambiare – con la fine degli anni ’90 un momento cruciale. Jean-Guy predilige vini potenti e ha ridotto la quantità di tempo che i vini trascorrono in vasca, introducendo la diraspatura (gradualmente, dal 1997, all'inizio tutta fatta a mano) e botti di rovere – con l'élevage che è passato da tutto cemento a rovere nuovo al 100% tra il 1997 e il 1999. Ha assunto Michel Rolland come consulente a partire dal 1998, e ha ridotto le rese – raccogliendo un massimo di 25hl/ha. 
Nel 2005, Jean-Guy ha introdotto un diraspatore meccanico e una cernita densimetrica, entrambi i quali hanno contribuito a un cambiamento significativo nella qualità, e tutto è stato diraspato dal 2010, per incoraggiare un profilo tannico più rotondo in gioventù. Nel 2012, alla proprietà è stato concesso lo status di Grand Cru Classé, riconoscendo i loro sforzi. Marcenat è entrata ufficialmente nel team nel 2014, portando la propria visione, spingendo per ulteriori cambiamenti a partire dal 2016 e assumendone infine il pieno controllo nel 2021. 
Clos de Sarpe oggi 
I vigneti di Clos de Sarpe si estendono per 3,68 ettari, tutti in un blocco sull'altopiano di Sarpe ed esposti a sud/sud-est, a solo un chilometro dal villaggio di Saint-Emilion stesso e vicino sia a TrotteVieille che a Troplong Mondot, così come a Sansonnet e Haut-Sarpe. 
Qui il terreno superficiale è sottile – solo 20 cm in alcuni punti – e si trova su un substrato roccioso calcareo, che contribuisce all'elevata acidità dei vini (normalmente con un pH basso di 3,2-3,4). Oltre la metà del vigneto ha tra i 60 e gli 80 anni, con il Cabernet Franc più vecchio che ha ormai più di 100 anni, piantato dal prozio di Marcenat nel 1923. 
L'età della vite si combina con il substrato roccioso calcareo per aiutare questo sito a resistere a condizioni calde e secche: un vantaggio particolare quando il clima cambia. Il calcare agisce come una spugna, trattiene l'acqua, e le radici penetrano in profondità nel substrato roccioso, accedendo a queste riserve. Le rese sono naturalmente basse data l'età delle viti, e le annate recenti hanno visto alcune rese minuscole, ma Marcenat punta a circa 35 hl/ha in una buona annata (più che sotto suo zio e l'influenza di Rolland). 
Per preservare l'età del vigneto, Marcenat sta gradualmente iniziando a reimpiantare il sito. Come parte di questo progetto, ha aggiunto un po' più di Cabernet Franc e una piccola porzione di Petit Verdot. Precedentemente 85% Merlot e 15% Cabernet Franc, oggi il vigneto comprende 78% Merlot, 20% Cabernet Franc e 2% Petit Verdot.
La famiglia ha sempre lavorato in modo biologico, senza mai utilizzare pesticidi o erbicidi, ma il vigneto è ufficialmente certificato dalla vendemmia 2020, cosa di particolare importanza per Marcenat. Per lei il lavoro si svolge tutto in vigna piuttosto che in cantina e la filosofia è molto borgognona, mantenendo tutto il più semplice possibile. 
La squadra è piccolissima e Marcenat fa quasi tutto da sola, coadiuvata da Frank Bartolomucci. Oggi la frutta viene raccolta tutta a mano, refrigerata durante la notte, diraspata e poi cernita per densità. Ogni parcella viene vinificata separatamente, la maggior parte fermenta nelle vasche di cemento utilizzate dagli anni '50, tuttavia il Cabernet Franc più vecchio viene fermentato in botti di rovere nuove da 600 litri. Usa solo lievito indigeno quindi le fermentazioni sono lente, almeno 10 giorni in genere. I tempi di macerazione sono lunghi, normalmente il vino trascorre sui 40 giorni, e fino a 50 giorni sulle bucce, a seconda delle annate, ma con un'estrazione molto delicata. La fermentazione malolattica può essere impegnativa con il basso pH, quindi deve regolarmente inoculare per forzarla (la malolattica è essenziale per la stabilità del vino, in particolare per il vino destinato a un lungo invecchiamento). 
La porzione di rovere nuovo è stata attenuata, con Marcenat che invecchia il vino per un anno in circa il 70% di rovere nuovo, con il resto in botti di secondo riempimento (e occasionalmente un po' di cemento se necessario). Viene poi assemblato e affinato in cemento per circa sei mesi prima dell'imbottigliamento senza filtrazione. Il rovere è costituito da botti borgognone da 228 litri (rispetto ai tradizionali 225 litri di Bordeaux), in gran parte Tronçaisoak del bottaio Taransaud. Marcenat ritiene che le botti borgognone si abbinino meglio al vino, apprezzando le doghe più spesse e la stagionatura più lunga (30 mesi contro i 24 della norma per Bordeaux). 
I vini Clos de Sarpe oggi 
Clos de Sarpe produce due vini: l'omonimo Grand Vin e un secondo vino, Charles de Sarpe, introdotto nel 1997, dal nome di Charles Beyney, figlio di Jean-Guy e cugino di Marcenat. Fino all'annata 2015 compresa, il secondo vino era un saignée del Grand Vin, utilizzato per aumentare la concentrazione del Grand Vin. Da allora, è stato prodotto solo in alcune annate quando c'erano abbastanza frutti per produrre un secondo vino, come il 2019 e il 2023. 
Mentre la maggior parte dei produttori parlerà della freschezza dei loro vini provenienti dal Cabernet Franc, per Marcenat è il Merlot a portare l'acidità, mentre il Cabernet Franc fornisce la struttura del vino. 
Degustando Clos de Sarpe negli anni '60, la freschezza del sito traspare costantemente, così come una distintiva mineralità terrosa. La purezza di un vino come il 1966 è straordinaria – e regge magnificamente anche oggi. Si possono ancora vedere le tracce dell'immensa struttura che i vini 1975 e 1988 devono aver avuto in gioventù, fornendo oggi una presa gentile insieme alla loro gustosa intensità. Mentre i vini avevano uno stile significativamente più potente alla fine degli anni '90 e negli anni 2000, quella potenza sembra equilibrata oggi, il rovere nuovo al 100% integrato e discreto - e il 2001 particolarmente straordinario. Le annate 2010 e 2015 di Charles de Sarpe sono vini meravigliosi, con una sensazione più morbida ed eleganza: un succo che sarebbe degno di molti Grands Vins. 
Questi vini un tempo erano conosciuti per la loro potenza e forza, ma Marcenat ha modificato lo stile, appoggiandosi alla naturale freschezza del sito. Cerca tannini setosi e una purezza che renda i vini più accessibili in gioventù. È, ti dirà, molto semplicemente il vino che le piace e che vuole fare. Degustare i vini en primeur da quando lei è subentrata suggerisce che qui ci aspettano solo cose buone. Ad ogni annata, l'impronta di Marcenat sui vini sembra più chiara e la qualità smentisce le condizioni della stagione di crescita, a testimonianza sia del suo talento che del terroir. 
Una nota sulle etichette del Clos de Sarpe 
Come puoi vedere nella line-up di questa degustazione (sotto), le etichette sono cambiate nel corso degli anni. I vini più antichi prodotti da Yvan Beyney portano un'etichetta molto tradizionale, che è cambiata nel 1986 per avere un bordo blu quando Jean-Guy (zio di Marcenat) è subentrato. Quando lo stile del vino cambiò negli anni '90, Jean-Guy cambiò nuovamente l'etichetta (dall'annata 1998) con una con bordo in lamina d'oro. L'etichetta attuale è stata introdotta nel 2012 quando la proprietà ha ottenuto lo status di Grand Cru Classé. 
La degustazione verticale: Clos de Sarpe 1966-2015 
2015 Charles de Sarpe: Maylis Marcenat ricorda vividamente la vendemmia 2015, poiché è avvenuta nello stesso periodo in cui ha dato alla luce le sue figlie gemelle. È stata l'ultima annata in cui il secondo vino è stato prodotto come saignée del Grand Vin, riecheggiando le sue proporzioni di 85% Merlot e 15% Cabernet Franc, ed effettivamente una versione meno potente, invecchiata in 50% rovere nuovo e 50% rovere di un anno. Il vino è ancora agile e vibrante, offrendo al naso frutti di bosco rossi brillanti. Al palato mostra toni più saporiti, con prugna rossa macerata e un sottile strato gessoso di tannini, tagliati da un'acidità brillante che conduce fino a un finale appetitoso. Questo è in un posto bellissimo adesso. 
Clos de Sarpe 2015: La tipica miscela di 85% Merlot e 15% Cabernet Franc (come ogni annata mostrata in questa verticale), il Clos de Sarpe 2015 è stato invecchiato in rovere nuovo al 100%. Come si può intuire dall'élevage e dalla potenza dell'annata, questo non è un vino timido e riservato, tuttavia l'acidità tipica di Clos de Sarpe si fa strada attraverso il suo nucleo e bilancia l'intensità del vino. Si sente ancora giovane, ricco di frutti di ciliegia scura sul naso compatto, che gradualmente offre toni più dolci e profumati con il tempo nel bicchiere. C'è solidità al palato - con una massa di frutta ricca e concentrata, ma c'è anche una succosità qui lo rende appetitoso, con una dolce carnosità. È rotondo e pieno, con una salda presa di tannino sul finale. Travasalo per godertelo adesso, con molta aria, ma questo si svilupperà nel prossimo decennio e oltre. 
2010 Charles de Sarpe: L'annata 2010 è stata la prima in cui i frutti sono stati tutti diraspati a Clos de Sarpe. Degustando il secondo vino con l'enologo Maylis Marcenat, non può fare a meno di chiedersi perché suo zio non abbia messo un succo così meraviglioso nel Grand Vin. Ora è un bell'esempio flessibile e maturo di Saint-Emilion: il naso sottile, che si sposta tra frutta dolce, fiori accentuati e complessità di tartufo nero. Il palato è lungo ed equilibrato, meravigliosamente risolto, senza soluzione di continuità e morbido, ancora con una freschezza appetitosa e un tocco minerale terroso nel lungo finale. Bello. 
Clos de Sarpe 2001: questo è stato un vino eccezionale nel nostro verticale e un vino che occupa un posto speciale per Marcenat. Come ci ha detto, "Per me è meglio del 2000 - con più freschezza, più equilibrio, più tutto". Il nuovo rovere al 100% è integrato, con il naso che mostra ora molta complessità terziaria: ferro, sousbois e una sottile fogliame si mescolano con il frutto della fragola ancora fresco e morbido. C'è trasparenza qui, ma ancora molta concentrazione: il palato è ancora agile con frutti rossi morbidi e succosi e un'acidità elevata e succosa che sostiene il frutto e riempie il lungo finale, completato da una nota terrosa. Superbo. 
1998 Clos de Sarpe: questa è stata una delle prime annate ad essere invecchiata in rovere, vedendo l'80% di legno nuovo per il suo élevage. È stata una grande annata per la Rive Droite, come dimostra questo vino. Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail.  In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches.  The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. While it remains clear that excessive yields can produce dilute wines, with so many variables play, it’s also clear that less isn’t always better. Read more Editorial

Understanding yield and quality in wine

Yield and quality: is less really more?

Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits
