The 2025 Bin 311 Chardonnay was sourced from Adelaide Hills, Tasmania and Tumbarumba. It leads with a nose abundant with white flowers, white orchard fruit and green apple, and the palate shows caper brine and green olive tapenade. The texture is creamy, and the flavors are nutty to close. It is elegant and tightly coiled, polished and sleek. The 2025 vintage for Bin 311 Chardonnay was defined by classic cool-climate conditions across Adelaide Hills, Tasmania and Tumbarumba. Broad-brush across three diverse regions and specific to the vineyards that Penfolds sources from: adequate winter rainfall, a mild spring and a long, cool growing season supported even ripening, preserved acidity and encouraged slow flavor development. The absence of significant heat spikes, along with cool, dry harvest conditions, allowed for precise picking and wines of tension, freshness and fine structural detail. It matured for eight months in French oak barriques, 23% of which were new. The wine has an alcohol content of 13.0%, with 6.4 grams per liter of acidity and a pH of 3.11.

A multi-regional blend encompassing Tasmania, Adelaide Hills and Tumbarumba, bringing a unique flair. Layers of sliced melon, cashew, flint, candied lime and kiwi with a salty, reductive edge. The palate is taut and focused with a mealy, unctuous mouthfeel, balanced acidity and a classical finish. A lovely bottling drinking well straight out of the gate. Drink or hold. Screw cap.

Matured for eight months in French oak barriques (23% new). Fine, fragrant, gentle aromas of bath powder and lemon zest. Taut, lean, tightly wound, dry-biscuity – like water crackers. Incisive acidity, good savoury length, finely focused. The ripest of the three Chardonnays in this latest release from Penfolds – 13% abv v 12.5% for the Reserve Bin A and Yattarna – and yet the most delicate and fresh, perhaps due, in part, to its bracing (and remarkably coincidental) pH of 3.11.   Very good now, mouth-watering, will build more depth and complexity over the next decade.
