The 2025 Dassault was picked 9 to 26 September and matured in 56% new oak barrels. It has an open-knit, sorbet-fresh bouquet that leans more towards red than black fruit, well defined with touches of spice box and clove. The palate is medium-bodied with very pliant tannins, fleshy and smooth, a little lower in acidity than its peers, but it feels prolonged on the finish. This is very promising.

A Merlot-heavy blend of 67% Merlot, 25% Cabernet Franc, and 8% Cabernet Sauvignon that's being raised in a mix of 56% new barriques, foudres, one-year-old barrels, and amphora, the 2025 Château Dassault is a very pretty, elegant example from this château. Red and blue fruits, crushed stone, and violet and floral nuances all define the nose, and it's medium-bodied on the palate, with a pure, polished mouthfeel, fine tannins, and outstanding length. It checks in at 13.5% alcohol with a pH of 3.66, and this is clearly one of the more precise, elegant examples of this estate I can remember.

Flowers, licorice, cherries, and plums work well here in the nose and on the palate. Medium-bodied, elegant, fresh, and with layers of sweet, vibrant red, with black fruits, and a blast of refreshing mint that comes in at the end of the finish. This represents a new era for Dassault. This is going to be a pleasure to enjoy just about the moment of release. The wine blends 78% Merlot, 17% Cabernet Franc, and 5% Cabernet Sauvignon.
