Note di degustazione
A single-vineyard wine from the winery's vast Pope Valley holdings, the 2021 Cabernet Sauvignon Dollarhide Estate Vineyard spent 19 months in French oak. Black cherries and cassis mark the nose, joined by hints of sage, bay leaf and cedar. It's medium to full-bodied and decently concentrated, with a certain stern, tannic dustiness and a slightly tart finish. Give it a few years in the cellar if you can.

The 2021 Cabernet Sauvignon Dollarhide Estate Vineyard checks in as 100% varietal that spent 19 months in 63% new French oak. It has a complex, spicy perfume of blue fruits, cedar pencil, and spring flowers, as well as nicely integrated oak, medium to full body, a concentrated, nicely structured mouthfeel, and outstanding length. Drink bottles over the coming 10-12 years.
Full bottle 1,506 g. 100% French oak, 63% new, for 19 months. pH 3.85. 856 cases produced. Inky purple in colour. Intense cassis, ripe blackberry and bramble. Sweet blackberry-jam palate with tannin so smooth and round you hardly feel it. Balanced acidity and a peppery spice to the finish. Very large. (SCJ)
