Sporting a medium garnet color, the 2007 Cabernet Sauvignon has mature notes of preserved plums, crème de cassis and Black Forest cake with hints of leather, Chinese five spice, incense and dusty soil. Full-bodied, rich and spicy in the mouth, the evolved fruit is open-knit and expressive at this stage, with plush tannins and a lively backbone paving the way for a long finish.
