The 2001 Cabernet Sauvignon Knights Valley is fully mature. Dried cherry, tobacco, spice, cedar, licorice and worn-in leather are all signatures of a wine that is fully mature. Any remaining bottles need to be finished, as the fruit is drying out.

The 2001 Cabernet Sauvignon Knight’s Valley reveals soft, round, chocolaty, cedary, herbal notes intermixed with copious quantities of black fruits. Winemaker Ed Sbragia and his assistant, Laurie Hook, told me that only 30% new oak was used in the wine’s upbringing. It is a complex, rich, sexy, full-throttle Cabernet Sauvignon that should continue to drink beautifully for another 4-5 years given its impeccable balance. Tel. (866) 708-9463
(100% cabernet sauvignon) Good deep red. Aromas of plum, currant and mocha. Fat, sweet and low-toned, with plum and mocha flavors. The tannins reach the front teeth. Not bad, but could use more verve.
Bright ruby-red. Quintessential cabernet aromas of cassis, graphite, bitter chocolate, currant leaf and leather. Sweet, lush and sexy; showing well after the bottling. Finishes with firm tannins and lingering fruit. At the moment, this is mostly from vines planted in 1989 and 1987, as much of the rest of these vines were recently replanted due to phylloxera.
