Note di degustazione
Savory herbs, tar, licorice, ash, dark raspberries and wild flowers all emerge from Seavey's 2011 Cabernet Sauvignon Estate Caravina. The 2011 is just a touch compact, but it nevertheless has plenty of energy. An intense, powerful wine, the 2011 needs another few years in bottle for the tannins to soften. There is no shortage of personality here. The Coravina is made from the estate's young vines. In 2011 the blend is 92% Cabernet Sauvignon and 8% Merlot.

The 2011 Cabernet Sauvignon Caravina offers up a complex bouquet of tobacco leaf, licorice, forest floor and underbrush intermixed with sweet red and black fruits. Medium-bodied with sweet tannin and low acidity, it is ideal for drinking now and over the next 8-10 years. This Conn Valley winery continues to impress with their full throttle, ageworthy Cabernet Sauvignons made with the consulting assistance of Philippe Melka. The vineyards are all dry-farmed hillside sites and as Melka has told me many times, the biggest issue with the Seavey vineyards is trying to control the formidable tannins that emerge in nearly every vintage. 2010 is certainly their strongest vintage since 2008 and 2007.
