The 2017 Chablis Valmur Grand Cru has a very neutral nose, backward and surly, reluctantly opening to offer Granny Smith apples, crushed rock and light spicy aromas. The palate is very poised and very saline. This is an uncompromising and, to some palates, quite "mean" Grand Cru, though I personally appreciate the laser precision and persistence on the finish. One to watch, because this is pure class. Tasted blind at the annual Burgfest tasting in Savigny-lès-Beaune.

Droin's 2017 Chablis Valmur Grand Cru is going to need time to fully emerge. The richness and oiliness that are typical of this site are present and yet hidden behind a veil of structure. What I find most captivating about the 2017 is the interplay of explosive energy and elegance. This is an especially refined expression of Valmur. Readers who can find it will be thrilled.
The 2017 Chablis Grand Cru Valmur has come together nicely since I tasted it last year, picking up additional tension with further time on the lees. Unwinding in the glass with a reserved bouquet of green apple, iodine and citrus oil and framed by a subtle touch of wood, it's medium to full-bodied, deep and structured, with chewy extract to burn and lively acids. This will demand some patience.
