Readers are undoubtedly familiar with the first wine from this program, the Cabernet Sauvignon from Beringer's 25-acre Chabot Vineyard. This wine, like all of these offerings, is made from 100% Cabernet Sauvignon aged in 100% new oak casks. The 1994 Cabernet Sauvignon Chabot Vineyard is a backward, full-bodied, muscular wine that is 5-7 years away from drinkability. With airing, the wine reluctantly gives up scents of pepper, iodine, cassis, mint, and earth. This full-bodied, large-scaled Cabernet begs for more bottle time. Good red-ruby color. Highly nuanced nose combines black cherry, minerals, mint, cedar and brown spices. Fat and sweet, with lovely perfumed flavor in the mouth. Already highly expressive. Finishes with terrific persistence, even tannins and a lively note of oak spice.
