The 1997 Givry Clos de la Servoisine reveals Joblot's typical dark ruby color, as well as a beautifully ripe, black fruit-laden nose. On the palate, this is an expansive, well-extracted, deep, black cherry-packed wine boasts flavors that last for 25 seconds. Anticipated maturity: 2001-2007+. Jean-Marc Joblot, one of the world's great Pinot Noir producers, harvested extremely early in 1997, in order to "maintain adequate levels of natural acidity." Since Joblot's work in the vineyard always ensures moderate yields (the 1997 Cellier aux Moines was harvested at 28 h/h), his grapes achieve physiological ripeness earlier than most, providing him with the luxury of setting early harvest dates.
