Lastly, the 2021 Cabernet Sauvignon Padrone comes from the warmer, west-facing slope in front of the property and is based on 87% Cabernet Sauvignon, 8% Cabernet Franc, 4% Merlot, and the rest Malbec raised in 50% new oak. It's a bigger wine than Signori yet certainly plays in the focused, elegant, very classic expression of this site. Cassis, black cherries, savory herbs, iron, and baking spice notes all shine here, and this beauty is medium to full-bodied, has a concentrated, layered, elegant mouthfeel, plenty of tannins, and a great finish.

Full bottle 1,627 g. 87% Cabernet Sauvignon, 8% Cabernet Franc, 4% Merlot, 1% Malbec. 18 months in 55% new French oak. 1,000 cases produced. Inky purple colour. Thick black fruit and char to the nose with some lift from cassis notes. Incredibly ripe black fruit and viscous weight but with high, driving acidity cutting through. This wine represents all estate-grown grapes from various blocks of the Signorello 30-acre property that lies just south of the Stags Leap District. Added to the cabernet are 8% cabernet franc, 4% merlot and 1% malbec. Packed with delicious blueberries, dark cherries, dark chocolate and spearmint, it’s velvety and full-bodied in structure. Drink or hold.

Signorello's top red is the 2021 Cabernet Sauvignon Padrone, a blend of 87% Cabernet Sauvignon, 8% Cabernet Franc, 4% Merlot and 1% Malbec. While somewhat cedary, it doesn't come across as over-baked but rather as a deep, savory style, with plenty of loamy earth notes and black olives. It's full-bodied and richly tannic but ripe, velvety and long on the finish.
