A selection of the top lots in the cellar, the 2021 Cabernet Sauvignon The Core (24 months in 100% new barrels) is more reserved and closed, yet it clearly has terrific potential. Exhibiting a deep, inky purple hue as well as loads of cassis, plum, graphite, and chocolaty oak-like aromatics, it hits the palate with full-bodied richness, a concentrated mouthfeel, building tannins, and a great finish. It needs a solid 2-4 years of bottle age and will have 15+ of prime drinking.

A best-barrels blend, Buoncristiani's 2021 Cabernet Sauvignon The Core offers up seductive notes of ripe black cherries and cassis, plus a whiff of dried sage and a hint of vanilla. It's full-bodied, concentrated and tannic, supple at first, then develops an attractively dusty texture on the lingering, licorice-tinged finish.
The 2021 Cabernet Sauvignon The Core is laced with crème de cassis, violets, cloves, lavender, licorice and plenty of sweet oak. Dense and voluptuous to the core, the 2021 packs a pretty huge punch. Even so, its balance is impeccable.
