A brilliant straw hue, the NV Champagne DMY Brut comes from the 2019 and 2020 vintages in this release. It offers a savory and smoky profile upon opening, with spiced notes of orange marmalade, almond, raw honey, redcurrant, and apricot. Full-bodied, it takes on more volume without weight and lends more mineral persistence through the sides of the mouth and back of the palate, with a mouthwatering saltiness on the finish. It is a blend of roughly 50% Pinot Noir, with 35% Chardonnay and the remainder Meunier. As it opens, it continues to evolve in the glass, with its pure red fruit coming further into focus. 0.5 grams per liter dosage. Drink 2025-2040. Fabrice Gass’s small family estate is a shining star based in Damery in the Montagne de Reims. The wines display richness, depth, and precision, with a gentle touch of reduction. Formerly the cooper of Bollinger, today Fabrice is joined by his son Gabriel. Each of the three cuvées they produce is aged in barrels, including barrels formerly used by Bollinger. The SP and DMY are always crafted as a blend from two consecutive vintages, while the Sensum Vertigo is their vintage wine. While the SP offers the most immediacy in the range, the DMY stands above the rest as the most comprehensive picture of what the estate has to offer. (Although I would love to have a few bottles of Sensum Vertigo stashed away, just in case that changes years down the road.) These are wines that improve with air, and I have found myself, on more than one occasion, noting that the last glass from the bottle is the best – and also drunk too soon. The SP sees three years sur latte and typically sees a touch more dosage compared to the DMY, while the DMY and the Millesime are aged for five years on the lees prior to disgorgement. Riddling and disgorgement are entirely done by hand, à la volée. They own seven parcels, all within Damery, which they farm organically. Production is approximately 5000 bottles a year.

A deeper yellow hue, the NV Champagne DMY Brut (from 2019 and 2018) is beautiful, with a stunning nose of custard, brioche, pastry, hazelnut, and perfume. Rounded, layered, and full-bodied, it fills the palate with a decadent yet fully dry feel as well as outstanding sapidity and a long, fantastic finish. Its mousse is refined and lively, and it has a great feel that suggests it’s going to age at a slow rate, but I’m sure these bottles are going to be drunk too soon.

The latest NV Brut DMY is a 60/40 blend of the 2020 and 2019 vintages, disgorged à la volée for our June 2025 tasting. Predominantly Pinot Noir, it incorporates approximately 30% Chardonnay and only 13% Pinot Meunier and opens in the glass with evocative aromas of yellow apple, brioche and orange zest. On the palate, it is medium- to full-bodied, deep and textural, boasting a generous core of ripe fruit balanced by vibrant acidity and plenty of sapid nuance. As always, DMY undergoes tirage under natural cork—rather than the crown caps commonly used for Sp—and typically receives a dosage of three to four grams per liter.
