Drinking wonderfully, with upfront, slightly high-toned aromas of violets, leaf tobacco, bramble, mint, and purple fruits, the 2005 Domaine Olivier Hillaire Châteauneuf-du-Pape is a beauty on the palate. Medium to full-bodied and balanced, with plenty of concentration, glycerin, and structure, this should continue to shine for another decade.

Bright medium red. Jammy red berry and cherry scents are perked up by a tangy mineral undertone. Well-focused, sweet raspberry and kirsch flavors are complicated by a gentle olive quality and finish with impressive sappy length. This is already delicious.
Elegant black cherry and raspberry notes emerge from the 2005 Chateauneuf du Pape, along with soft tannins, a round, medium-bodied style, and good freshness, purity, and length. It should drink well for 6-8 years at the minimum. When Olivier Hillaire dissolved his partnership with Domaine des Relagnes, he took one of their top vineyard parcels, Les Petits Pieds d’Armand, with him. Hillaire is a multi-talented gentleman as not only is he a skilled winemaker, but he also owns the finest bakery in the village of Chateauneuf du Pape.
