The 1992 L'Ermitage Brut is scented of roasted coffee, burnt sugar and crème brûlée, quince paste, candied peaches, iodine, mushroom and wet bark, with more delicate top notes of flowers coming through with time. The palate is full bodied, rich, mature and hedonic, with loads of savory, toasty, caramel and earthy character. It has a very fine, lacy veil of mousse remaining and finishes very, very long. Disgorged in June of 1997, this is gorgeous mature sparkling wine.

Crystallized ginger, orange confit, spice and crème brûlée lend the 1992 Brut L'Ermitage an exotic flair. There is plenty of energy and body left, even if some of the rusticity in the aromatics also remains. At 33 years of age, the 1992 strikes me as past its peak. Dosage is 13.1 grams per liter. Disgorged: June 1997.
