2021 Perliss Estate Vineyards Cabernet Sauvignon The Ravens

The 2021 Cabernet Sauvignon Corvus Pacificum is the Pearl of the Ravens blended with just under 3% seawater. While this might seem bizarre, it certainly works, and it gives the wine a slightly softer, more rounded profile (I'm sure there's a solid pH shift) as well as a touch more gaminess in its aromatics of darker fruits, leafy herbs, spice, and salty minerality. The salinity really shows on the palate, and this full, singular, impressive wine should have 15 years or more of longevity. You won't find anything else like it out there, that's for sure.
