Full bottle 1,284 g. 100% Chardonnay. In 2013 the city of Dijon purchased a 160-hectare property on the edge of the city, complete with a winery and 8 ha of planted land (5 red, 3 white). They then ran a competition, the prize: to run the estate and have free rein on the wine made there. Marc Soyard was the winner. Biodynamic but not certified. Vinification is done with ambient yeasts, with élevage in a mix of new and old barrels. Soyard often experiments with different types of wood such as chestnut and acacia. Minimal SO 2 added at bottling, minimal use during fermentation and élevage depending on vintage. Appley citrus aroma with a bit of struck-match character but not OTT. Really intense contrast between ripe zesty lemon fruit and high acidity. Just in balance if you like high acidity. Full-flavoured and very primary. I think this would be better with another year (or longer) in bottle. (JH)

Bursting with aromas of plums, cherries, cinnamon and cloves, the 2019 Bourgogne Pinot Noir Côteaux de Dijon is medium-bodied, fleshy and fine-boned, with a sapid core of fruit, melting tannins and a mineral finish. Vinified with entirely whole clusters and minimal sulfur dioxide, it's an expressive, lively wine that's already hard to resist.
