A blend of Cabernet Sauvignon, Merlot, Sangiovese, Cabernet Franc, and Syrah, the 2001 Canto was bottled unfined and unfiltered. It possesses an imposing ruby/purple color as well as a sweet nose of new saddle leather intermixed with espresso roast, chocolate, and berry fruit, medium body, good acidity, and a nice spiciness. (65% cabernet sauvignon, the rest sangiovese, cabernet franc and merlot) Full ruby-red. Very primary aromas of black cherry, blackberry, licorice, chocolate, tar and game. Very intensely flavored, with juicy acids giving the berry, cherry, tobacco, leather and chocolate flavors lovely definition and inner-mouth aromatic character. Finishes firmly tannic and very long. This has delivered on its early promise.
Deep ruby-red. Superripe aromas of almost port-like black cherry, cassis, barbecued pork, star anise, and licorice, with some intriguing oxidative hints that suggest Amarone (Shoener, who put together the blend, refers to the wine as "Byzantine"). Dense, sweet and chewy but distinctly high-pitched, with a sizable tannic structure. A big, broad, horizontal wine with impressive mid-palate material. Reminiscent of an outsized Tuscan blend.
