Rich black walnuts, pecans, tangy sourdough bread, orange peel and touches of brine, soy, roasted sweet potatoes and seaweed. Almost spicy. Full-bodied and creamy on the palate, with exceptional depth and complexity before a saline, walnutty but refined finish that doesn’t want to quit. If you need a reference for the word “complexity,” this one will do. Drink now.

100% Palomino. This wine started as a Tío Pepe. After fermentation, it was fortified to 15.5% and transferred to a Tío Pepe solera. After four years of biological ageing, it was racked to the solera of a young amontillado, where it remained for another six years. After this time, oxidative ageing began, and 10 years later it was racked for the last time to the Del Duque solera, where it rested for 20 years . 6,000 bottles per year. RS <5 g/l. It has a very sweet, sugary aroma, showing a touch of honey, chocolate, sultana and caramel. Concentrated but with a great integration of flavour, superb balance and really mellow. Voluminous and sweet on the palate. It is a serious and meritorious wine, so harmonious that it will delight everyone. Del Duque is always one of the smoothest amontillado wines. Tangy, complex but really soft-spoken and nuanced. A twist of mineral to the salted nuts. Almonds, sourdough, biscuits, walnuts, salted caramel and Arabic dates. Intense and really concentrated on the palate with an sea of flavors lingering in a salty and bone-dry finish. Lasting for minutes. Drink now.
If you love Highland single malt, you will instantly get this peaty, sweet and wild and glossy sherry. It's cobbler's glue and smoked honey on the nose; sea-spray, smoke and Highland honey in the mouth. It tastes of bracken, black with the bruise of mountain streams and mountains stones; of brackish streams salt-licked with minerals; of kumquats pickled in tamarind and smoky with the under-growl of black cardamom.
