The 2019 Ones Cabernet Sauvignon is a stunning, complete wine even at this early stage. Deep ruby-purple, it's surprisingly bright and pure on the nose, with classic red cherries, dried herbs and savory spices, gaining more nuance of blueberries and dried flowers as it sits in the glass. The palate is layered with fresh fruits, spices, herbs and floral perfume, knit by an abundance of silt-like tannins, and it finishes with tremendous lift and length. It's exceptional within the Booker portfolio itself, and in the context of Paso Robles.

The flagship Cabernet, the 2019 Cabernet Sauvignon Ones is a blockbuster, mammoth-sized effort revealing a dense purple hue as well as load of cassis and dark fruits, full-bodied richness, ultra-fine tannins, and a seamless, layered, incredibly compelling style on the palate. I’d hide bottles for 2-4 years, and it should have a long life. Eric Jensen continues to tweak the style of these wines, and today the wines play in the much more elegant, streamlined end of the spectrum while still bringing plenty of classic Paso Robles fruit and texture. Alcohol levels are almost all under 14.5%, yet the tannins are ripe, and the wines have solid mid-palate density, integrated acid levels, and straight-up terrific overall balance. These all required plenty of air to show at their best, and I don’t think there’s a wine reviewed that won’t benefit from 2-3 years of bottle age.
