Whole-cluster pressed to stainless steel for fermentation, with roughly 10% reserved for fermentation in barrel. Malolactic conversion is blocked. 396 cases made. Palest straw with a hint of green. Smells of wet chalkboard, unripe peaches and lemon oil. Crackling bright citrus oil, peach pit and lemon pith flavours mix with a hint of white flowers as stony minerality shows through with a faint chalky texture. Excellent acidity. Bright, fresh and ever so slightly saline in quality. (AY)
