Medium to deep garnet colored with a lingering touch of purple, the 2007 Cabernet Sauvignon springs from the glass with notions of baked blackcurrant, stewed plums and blackberry tart plus suggestions of garrigue, tilled black soil, truffles and tar with a waft of sautéed herbs. Full-bodied and powerfully fruited in the mouth, it delivers a great frame of ripe, velvety tannins and just enough freshness, finishing long and earthy.

(from a certified organic vineyard at the end of Pickett Road , not far from Araujo Estate) Good ruby-red. Complex, soil-driven aromas of redcurrant, tobacco, minerals, bitter chocolate, flowers and earth. Pliant and sweet in the middle palate but with good cedary lift to the redcurrant and tobacco flavors. Not an especially fat or dense wine but has personality. This juicy, supple midweight builds nicely on the back end, finishing with sweet tannins and good perfumed lift. Winemaker Celia Welch prefers Taransaud and Darnajou barrels for cabernet but frequently uses a bit of Sylvain to add perfume ("like cabernet franc") and Seguin-Moreau to add "cigar smoke and bacony character."
