Note di degustazione
The 2001 Cabernet Sauvignon Signature (84% Cabernet Sauvignon, 10% Merlot and the rest Cabernet Franc, Petit Verdot and Malbec) reveals a youthful dense, opaque ruby/purple color as well as classic notes of creme de cassis, melted licorice, espresso roast, spice box and a subtle touch of new oak. The tannins are still present, the wine possesses outstanding density and is clearly built for the long haul. It requires 2-4 more years of bottle age and is capable of lasting two decades. Tel. A deep ruby/purple color is accompanied by reluctant aromatics, which, with aeration, reveal notes of damp earth, underbrush, resiny pine forest, black currants, and berries. The palate offers savory flavors of berries, plums, black currants, earth, and spice box. Exhibiting medium to full body, supple tannin, a judicious touch of oak, and a long finish, it gains in stature and quality with each sip. While accessible now, this 2001 should evolve gracefully for 10-12 years. Tel. (707) 257-2345; Fax (707) 257-3132
