The dark ruby/purple-tinged 2007 Cabernet Sauvignon Napa/Sonoma is a soft, flamboyant wine with silky tannins as well as lots of black currant, tobacco leaf, cedarwood and spice box characteristics. An opulent mouthfeel and beautiful length and elegance suggest it should drink nicely for 10-15 years. Fred and Mary Constant’s vineyard that straddles the Napa/Sonoma county line high on Diamond Mountain is one of the most beautiful sites in an area known for numerous spectacular vistas. With assistance from winemaking consultant Paul Hobbs, the Constant wines have gone from strength to strength over recent vintages, with the finest examples included in the following tasting notes. Constant produces two Cabernet Sauvignon cuvees, one a 50-50 blend from their vineyard that traverses both Napa and Sonoma counties, and a second wine that is made from 100% Napa fruit. Tel. Bright, saturated medium ruby. Ripe, expressive aromas of cassis, blackberry, licorice and herbs. Very rich, layered and lush, with a texture of liquid silk to the flavors of dark berries and bitter chocolate. Wonderfully smooth, suave wine, finishing with substantial ripe, broad, toothdusting tannins and excellent length.
Saturated bright medium ruby. Aromas of blue- and blackberry, graphite, licorice and herbs, with a suggestion of chocolatey ripeness. Lush and supple but quite primary, even a bit youthfully clenched (these 2007s have just been racked twice to this point), with a musky quality to the black fruit flavors. Very young wine, finishing with substantial tongue-dusting tannins and a suggestion of roasted fruits.
