The 1991 Cabernet Sauvignon Estate is a heady, flamboyant wine. Rich, dense and shockingly unctuous in the glass, the 1991 is a timeless beauty. Blackberry, plum, chocolate, dried herbs and incense race across the palate. A healthy crop took time to ripen, so the 1991 was picked on the later side, yielding an unusually exotic Cabernet Sauvignon with stunning inner perfume and layers that continue to open in the glass. The only reason I am not surprised by how well the 1991 is showing today is because I have tasted many of the estate’s Cabernets at maturity. This is the finest bottle of the 1991 I have ever tasted. Unforgettable.

For the hardcore collectors, we jumped back another decade to the 1991 Cabernet Sauvignon Estate, which should be consumed over the near term. Garnet-brick in hue, it's meaty and earthy, with notes of leather and Worcestershire sauce, yet it remains silky and elegant on the palate, with lovely texture and length, even if the flavors have gone completely savory and attenuated. These wines don't last forever, but they can still provide enjoyment even when past their peak.

Medium red with a palish amber-green rim. Inviting aromas of redcurrant, coffee, mocha and leather. Surprisingly sweet on the palate for a fully mature wine, but nicely integrated acidity gives energy and cut to the claret-like flavors of red fruits, mocha and spices. This densely packed midweight, still surprisingly lively, finishes with a firm tannic underpinning, noteworthy length and a slightly exotic spicy quality. À point right now but should hold for a while. (12.5% alcohol; this fruit was harvested well into October)
