The deepest-colored, potentially longest-lived and finest wine in Amiot-Servelle's 1993 portfolio is the Chambolle-Musigny Les Amoureuses. Boasting impressive color saturation, as well as a reserved but spicy black and red fruit-scented nose with a touch of herbs and earth, this medium-bodied, dense, burly wine possesses considerable tannin, but the requisite fruit is present. The wine needs 3-4 years of cellaring and should keep for 12-15. Christian and Elizabeth Amiot are to be commended for the fine work they are doing at this small, 15-acre estate previously known as the Domaine Servelle-Tachot. The wines go from strength to strength, and the Amiots hit the bulls-eye with their 1993s. All except the Chambolle-Musigny were bottled unfiltered. In contrast to so many rough, diluted, astringent, charmless 1993s, Amiot-Servelle's offerings are densely-colored, with gorgeous extract levels, fine ripeness, and plenty of aging potential.
