At any another estate, this would be the entry-level wine, but Zýmè goes for extra bells and whistles with more spice and concentration. The 2019 Valpolicella Classico Superiore benefits from some bottle age to show hints of resin or petroleum jelly with dried fruit and blackcurrant. You also get dried rose and violet. The blend is 40% Corvina, 30% Corvinone, 25% Rondinella and 5% Oseleta, and 30,000 bottles were made.

This is a model of purity, displaying silky textures and vividly ripe red and blue fruits energized by brisk acidity. A tactile mineral tinge adds traction toward the close. Crunchy tannins frame the experience well, as the 2019 finishes long and full of youthful tension. While already enjoyable today, there's no shame in losing a few bottles in the cellar for three to five years.
