Jean-Louis Peste was a doctor at the Hospices de Beaune for 30 years in the mid-19th century. His daughter, Baroness du Baÿ, bequeathed a vast estate to the Hôtel-Dieu in his memory, in 1924. Historically, this Cuvée comes from a blend of terroirs, mainly Les Chaumes, completed with Les Bressandes and Les Grèves. Starting from 2022, cuvée Docteur Peste is 100% Les Chaumes. This terroir is located on the lower, southern slopes of the Montagne de Corton hill, immediately west of Aloxe-Corton village. It sits immediately below Le Charlemagne and Pougets climats.
