Firm tannins are very much in evidence, with grilled cassis fruits and liqourice notes that we associate with great Australian Cabernet, but with less nuance at this stage than will appear with a decade or so in bottle. There is capsicum, red pepper, fennel and cracked cumin underneath, everything coiled and reserved right now. This stage of the vertical, with the wines around the ten year mark, shows how so much Australian Cabernet is drunk too young. 100% new American oak for ageing.

Bright purple. Highly expressive, oak-spiced cherry, blackcurrant, floral pastille and pipe tobacco aromas are complemented by suggestions of coconut and licorice. Sweet, seamless and penetrating on the palate, offering deeply concentrated dark berry, bitter cherry, mocha and spicecake flavors that show superb energy and definition. The strikingly long, juicy finish features repeating spiciness, an emphatic jolt of cherry flavors and suave, slow-building tannins.
100% Cabernet Sauvignon, matured for 17 months in 100% new American oak hogsheads . Tasted blind. Some sweet creamy oak on the nose. Slight hint of US oak? Very intense and sweet. This could be a one-off from somewhere outside the box. Lots of pleasure but the opposite of austere. (JR)
Very deep garnet-purple colored, the 2014 Cabernet Sauvignon Bin 707 has gorgeous crème de cassis, cedar, dark chocolate, spice cake and menthol notes, with a yeasty/meaty undercurrent and a waft of espresso. Medium-bodied, firm and fine in the mouth, it is intense yet elegant with great length and expression. This is another Penfolds offering that is so taut and primary at this stage, it would be a shame to open it without 2-3 more years in bottle.
